National Pancake Day Recipe + Hot Cocoa

Happy Tuesday Y’all!

I don’t do very many food posts on here as I am no ones top chef (lol). It’s not that I can’t cook though, its really just not my thing but there is one thing that I do not mind making and that is PANCAKES. I have been my pancake lover my entire life (I even did a speech on them in speech and debate in HS….lol). I love them really buttery, with crispy edges, and of course LOTS of syrup and whipped cream. In celebration of national pancake day, I figure I would share my pancake recipe with you guys. D is not a pancake lover (he’s a waffle guy) but if I offer to add chocolate chips to my recipe, he will eat them faster than I can cook them.

The recipe is pretty simple and as far as instructions, I mix my dry ingredients first and then mix all of my wet ingredients in with dry ingredients.

2 Cups All Purpose Flour

2 Tablespoons Granulated Sugar

1 Egg

2 Teaspoon Baking Powder

1 Teaspoon Baking Soda

1/2 Teaspoon Salt

1 Tablespoon Vanilla Extract

2 Cups Milk

2 Tablespoon of Melted Butter

I cook the pancakes in butter too on medium heat. The best way to tell when it’s time to flip pancakes is when you start to see little bubbles form. My mom taught me this trick as a kid and it has never not worked!

Hot Cocoa is always a good idea any time but I love it with breakfast in place of coffee. I absolutely refuse to drink hot cocoa with water but I guess this isn’t something that everyone does because when I whipped out the milk to make hot cocoa….D was quite confused and asked what I was doing..lol! He likes to joke (a lot) and I thought he was kidding but the look on his face was very serious and concerned! I won him over after it was all said and done and he thanks me for making him “gourmet” hot cocoa.

If we didn’t have a frother I would have warmed the milk in the microwave or on the stove but since we had the frother, I decided to use it. It took two frothing sessions to fill up one mug with milk. After I mixed the milk and the cocoa powder, we topped it off with whipped cream and chocolate. I chose white chocolate caramel squares and D chose chocolate chips.
