Our Favorite Holiday Snack

Recipe Details: 

1 20 oz package of dark chocolate morsels 
1 20 oz package of white chocolate morsels (we used 2 11oz bags) 
Peppermint extract 
Peppermints or candy canes 
Canola Oil 
Wax or Parchment paper 
Gallon Freezer Bags 


Peppermint bark is my husbands favorite holiday flavor. During the fall/winter season I stock up on everything peppermint bark flavor for him. This year I decided to switch it up. Instead of buying peppermint bark I decide to make some. I figured it might taste a little better than the store bought version. This recipe is delicious, quick, and easy but I did make one mistake. Instead of splitting the chocolate into two pans like I should have, I placed all of the chocolate into one deep dish pan. (HUGE MISTAKE!) It made the bark almost impossible to break apart. So when my husband finally got the pieces to break we ended up with 9 gigantic chunks of bark (haha!) My husband called them peppermint stalks! 🙂  Needless to say, we will be snacking on these for a while. 

So to begin the recipe you will need to place all of the dark chocolate chips into a medium glass bowl. Add about 1 teaspoon of canola oil into the bowl with the chips. Place the chips in the microwave for a total of 4 minutes. Make sure you stir the chips every minute. If you don’t mix the chips every minute they will burn. After the 4th minute, stir the chocolate and add 1/2 teaspoon of peppermint extract. (You may add more if you like.) Stir and then add the chocolate into a dish lined with wax paper. Place in the freezer. 




Repeat the same steps for the white chocolate. I did not have to place the white chips in the microwave for the entire 4 minutes. The white chips only took about two minutes to completely melt. You have to keep a close eye on the white chocolate chips because they will cook in the microwave. I added 1/2 teaspoon of peppermint extract into the white chocolate and I also folded crushed peppermint into the white chocolate.  Grab the dark chocolate out of the freezer and pour the white chocolate over the layer of dark chocolate. You can add more crushed peppermint on top if you would like. 



I placed the pan into the refrigerator (not freezer) over night because it was late when I made the bark but you can probably leave it in the fridge for 2-4 hours. (Just check to made sure its solid by poking the center with a knife or fork.) 

After the chocolate has solidified, take the chocolate out of the pan and remove the wax paper. Place the chocolate into a freezer bag and break it up into chunks. After that you are good to go! You can eat the bark alone, drop a few pieces into your coffee, or bake cookies with it. All options are delicious if you ask me! (haha!)
